Eating Local in July!
What to look for to make sure you are eating in season, local produce in July.
Being a part of a community garden and going through the process of harvesting and weeding (oh the never ending weeding!) has giving me a new appreciation for spring and summer. Besides the sunshine and great activities all over town - there is tasty, fresh, and local produce to enjoy.
Last month, we got into the early season stars like turnips, spring greens, and radishes. July brings a more varied harvest and options for creative dishes that highlight Idaho's local produce.
In July, look for red potatoes, early onions, cabbage, carrots, snap and shelling peas, cherries, apricots, raspberries, strawberries, fava beans, and the last the bok choy and arugula. Fresh tomatoes and zucchinis will make a bold appearance later this month. Find out more about ICL's work to promote healthy local food in Idaho.

Miso Cabbage Salad:
1 head of Napa cabbage
1 cup pitted and halved cherries
2 cups of snap peas
1/2 cup of green onion
Miso Dressing:
1/4 cup rice vinegar
1/4 cup veggie oil
2 Tbsp white miso
1 Tbsp sugar
1 tsp soy sauce
* you can always add fresh cilantro or ginger to this if you feel inspired.
